PISTACHIO RICE

This rice can be used as an accompaniment to a number of dishes including
Indian and North African items.

Serves: 6

Ingredients: 

2 cups (12 oz 375 g) basmati rice – washed

Flavorings:
1 ½ level teaspoons salt
⅓ cup (50 g or 2 oz) golden raisins or sultanas
½ cup (40 g or 1 ¼ oz) shelled, chopped pistachios
3 tablespoons finely chopped parsley
1 tablespoon pistachio or olive oil
½ level teaspoon ground pepper

 Method:

  1. Cook the rice according to instructions on the package or in a rice cooker.
  2. When cooked, fluff with a fork.
  3. Mix in the “Flavorings”.
  4. Cover the rice with a lid and leave to stand for 5 minutes.
  5. Transfer to a serving dish and serve immediately.
