2 lb (1 kg) yellow potatoes - peeled
3 tablespoons (¼ cup) extra virgin olive oil
¼ level teaspoon salt
⅛ level teaspoon black pepper


  1. Put the potatoes into a heavy pot and cover with water. Bring to the boil and cook until just tender – about 25 minutes at sea level. Cool.
  2. Set an oven to 425 F (210 C).
  3. Line a baking pan with foil.
  4. Brush 1 tablespoon oil over the foil.
  5. Halve or quarter the potatoes.
  6. Brush the remaining oil over the potatoes.
  7. Bake for about 40 minutes until golden brown.
  8. Serve immediately.
